Everyone photographs the canals. Almost nobody cycles twenty minutes past them — which is exactly where Cleo Wachter, guide and fifth-generation Frisian, says the Netherlands actually begins.

We met Cleo at a pancake house outside Leiden with one question: what does a slow week in Holland look like? Her answer became our itinerary — and then this conversation, edited for length over strong coffee.

On skipping Amsterdam (politely)

Cleo: "Give Amsterdam one day, on foot, early. Then take the train thirty minutes in any direction. Haarlem for the hofjes, Delft for the quiet canals, Utrecht for the wharves. The country is a necklace — Amsterdam is just the clasp."

She's right. Our best evening was in a town we'd never heard of, watching the drawbridge rise for a single sailboat while the café owner explained — unprompted, proudly — the bridge's entire 1898 mechanism.

On cycling like a local

Rent the boring black bike, not the shiny tourist one. Ride single file on the red paths. And learn the bell etiquette before the first roundabout: one ring means "I'm here," two rings mean "you're in my way," and nobody uses three. The famous knooppunten network — numbered junctions — turns the whole polder into a choose-your-own-adventure book.

Cleo's perfect slow day

  • —Morning market in any town ending in -dam, herring optional but encouraged.
  • —Twenty flat kilometres along a canal, with a pancake stop at kilometre twelve.
  • —A windmill that still works — climb it, the miller will insist.
  • —Sunset over the polder, where the sky does most of the sightseeing.
